These were my great-grandmother's favorite cookies to make. They go so quickly in my house that we have to double the recipe! (The dough is delicious, too!)
1 box chocolate cake mix
1 egg or egg yolk
2 tsp. peppermint extract
1/2 cup butter or margarine, well softened
Preheat oven to 350F. Mix all ingredients until well blended. Roll into small, smooth balls and place on cookie sheet an inch apart. Bake 8 to 10 minutes. (Take them out when they still appear slightly doughy, and let them sit a few moments on the pan. They harden as they cool, but if you leave them in the oven too long, they will become very crisp as they cool.)
Extra Ideas:
Dip the tops of the warm cookies in powdered sugar for a snowy look. Or top with cinnamon red hots for a Valentine cookie!

Yummy! This sounds so simple and delectable! I planned to make it for Valentine's Day tomorrow but did not have any peppermint extract - and when I went to the grocery store this evening, they were all out! *sigh* I suppose I'll have to make it another time.
Please keep sharing your lovely recipes!

We make a recipe very similar to this, but instead of peppermint extract we add 1/2 cup of Andres mint chips into the dough. They are sooo yummy! :-)
